Collaboration Series Whiskey Salami-Our all pork salami features Westland Distillery's American Oak Whiskey. We kept this formulation for this salami simple and added a generous dose of whiskey to allow the complexities of the whiskey to seep their way throughout this cured meat.
Collaboration Series Gin Salami-An all pork salami featuring Copperworks Distilling's Gin. This salami is inspired by a classic Hunter's Salami. It includes a variety of spices, including crushed juniper berries and chili flakes, to complement the botanicals imparted by the gin.
Collaboration Series Brandy Salami-An all pork salami featuring Brandy from Mastrogiannis Distillery in Lakewood, WA. We added a little bit of fresh ginger and gentle warming spices to complement the richness of the brandy.
Au Poivre Salami-Inspired by the classic French Steak Au Poivre, this all pork salami featuries green, black, and pink peppercorns, brandy, and a touch of thyme. It was developed by our Production Manager Andy Dekle, formerly the owner/chef of is his own French Restaurant.
